Mushroom and Bean Chilli (vegan)


Most ingredients received in our grocery packs:

1 tbsp of oil

20 mushrooms, diced

1 leek, thinly sliced

1 onion, diced

1 clove of garlic, chopped finely

1 tin of kidney beans, drained

1 tin of borlotti beans, drained

1 tin of butter beans, drained

2 tins of tomatoes

Chilli powder to taste

2 cups of rice (approx 360g)

Cooking Method

1. Heat oil on medium heat in a medium pan add the mushrooms, leek and garlic, and fry until tender


2. Add the kidney beans, borlotti beans, butter beans, tinned tomatoes and chilli powder (to your taste) to the pan, cook for 25 minutes


3. With 15 minutes to go on step above, add the rice to a pan of boiling water and cook for 12 minutes


4. Drain the water from the rice and serve all
