Stewed Apricots and rice pudding
Using ingredients from grocery boxes delivered 17 and 24 April 2020
1/2 cup dried apricots
1/2 cup of rice
1 1/2 cups of milk
1/4 cup sugar (optional extra for sweetness)
1. Half the apricot and remove stone.
2. Add apricot to a pan of sugar and water. Simmer until soft, drain and let it cool.
3. Add rice and milk to a pan with sugar. Simmer until rice absorbs the milk.
4. Add apricot to rice and enjoy!
